Hi everyone! I just finished making and EATING a peppermint cheesecake and my lunch. I also was able to fit in some hemp seed, buckwheat balls before I head off to work today.

Here is the cheesecake. You can see where the filling sloshed over the crust, oops. The recipe I used comes from the Sweet Gratitude book, which I highly
recommend. I did slightly modify the recipe.

My sandwich for today. It consisted of buckwheat bread/crackers, pickles, mustard, avocado, lettuce and tomato, yum.
