My Newest Creation



I made a raw apple cake this morning.
I pulsed walnuts (soaked and dehydrated), dates, pumpkin seeds, cinnamon, and salt in the processor.
I then pressed this sticky mixture into a biscuit cutter.
For the filling I chopped up some apple with honey, lemon juice, cinnamon, and nutmeg and pressed it into the biscuit cutter.
I then pressed in the walnut mix once again.
The top frosting is made like a cheesecake with cashews, dates (soaked), salt, lemon juice and melted coconut oil. I put the frosting in the fridge to set up so I could pipe it.
That's it, I won't taste it till later, but everything on its own was quite tasty! Especially that frosting!
Yesterday I bought Sarma's new book Living Raw Food. It should be here by Tuesday or Wednesday! Can't wait, I loved her first book!

One last thing, with my leftover walnut mixture from the apple cake I made some more buckwheat balls. I added about 2c of sprouted, dehydrated buckwheat and some water. I really like these because they are low on nuts and sweetener.
